02/5Cooking pakodas using boiling water

Till now, we have only enjoyed the deep-fried Pakodas that use a lot of oil, which can be harmful for health. This method is extremely good for thinly sliced pakoras such as onion and eggplant pakoras. For this, first of all, cut the onion/eggplant as thin as possible. Then mix all the ingredients for making pakodas like gram flour, salt, chilli and prepare the batter. Meanwhile, boil water in a pan. When the water starts boiling, put the pakodas in it one by one with your hands or a spoon. Don’t worry, they will not mix with the water as boiling water’s temperature works just like hot oil. Make sure that there should be enough water so that the pakodas can sink easily. When the colour of the dumplings starts changing, then understand that they have started cooking. If you want, you can take out one pagoda and check whether it is cooked or not. After cooking them in water, lightly grease with oil/ghee and cook for another 1-2 minutes in non-stick pan. Once done, take them out the pakodas and sprinkle chaat masala on top and serve with green chutney.

Using a non-stick pan to cook the Pakodas

When you use a non-stick pan, it uses less oil, and this is why a non-stick pan should be used instead of a normal pan while making pakodas. To make pakodas in non-stick pan, first prepare the pakoda batter. Then heat a non-stick pan on the gas, add one spoon of oil and spread it all over the pan. When the oil becomes slightly hot, add the pakodas one by one and cook on low flame for 5 minutes. When the colour of the pakoda starts turning golden, turn it over and cook the other side. Cook the pakodas thoroughly on both sides and take them out.

Creating pakodas using the appam maker

To make oil-free pakodas in appam maker, prepare the pakoda batter with gram flour, water, salt and spices. Next, grease all the moulds of the Appam maker with ghee or oil and pour a little pakoda batter in each mold. Cook the pakodas on low flame for ten minutes. When the pakodas start turning brown on one side, turn them and cook until the other side also turns brown. Your oil-free pakodas are ready to enjoy!

 Air fryer for Pakodas

One can also make pakodas in an air fryer. To make air-fried pakoras, prepare the batter and combine chopped vegetables in it. Make sure that the batter is thick enough to hold the veggies together. It should coat the back of a spoon without being too runny. Then, preheat the air fryer to 175-190 degrees C for about 5 minutes. Take small portions of the batter and shape them into small patties or balls. Lightly grease the air fryer basket with cooking spray or use a brush to apply a thin layer of oil. Place the pakodas in the preheated air fryer basket, leaving some space between them to allow for even cooking. Cook for about 10-15 minutes, flipping them halfway through, until they turn golden brown and crispy. The pakodas are done, enjoy them hot with green chutney and ketchup.
